Update: Mystery solved! Martin mentioned the suspected artist and with that information I was able to track down this painting:

Are you sure it’s a theologian? He is reading an official act and his books may be juridical codes. His dress looks like a judge’s robe.

The tower in the background looks vaguely familiar.
